Franco Manca Salina is open for summer 2019

Franco Manca Salina is open for the 2019 summer season. On the sea front in Lingua, on the island of Salina, lies our only international outpost.

 

Our founder Guiseppe Mascoli discovered Salina while he was looking for the perfect caper for our pizzas. He loved the biodiversity of the island, so we felt it was only right that we opened a Franco Manca there.

Salina is one of the seven Aeolian Islands, just north of Sicily in the Tyrrhenian sea. The black volcanic rock makes it the ideal place to grow capers on the lower, fertile land. With dramatic views and clear blue seas, where better to enjoy a pizza?

This is our third summer running our pizzeria in Salina. This year we opened just after Easter, ready for intrepid travellers, walking enthusiast and local islanders at the start of the season. We’re now in the middle of the summer season, and always pleased to welcome guests from far and near.

We’ve always championed properly sourced, local ingredients. Our menu features six pizzas. Working with local suppliers from Salina and Sicily, we serve fresh ingredients from anchovies to olives, aubergines to ricotta infornata, and of course, the capers. They are picked on the island and used not just in our Salina pizzeria, but in our pizzerias across the UK.

This year’s team is led by manager Sergio. More than half the team are local to Salina, but have worked in our pizzerias across the UK. Meet the team:

Sergio Zecchini is our Manager. Sergio completed his training with us in our London pizzerias.

Pamela Todaro is our Head Waitress. She’s local to Salina and has 15 years Island experience!

Alessandro Follone is our Pizzaiolo and has worked in our Chiswick and Wimbledon pizzerias before going to Salina

Francesco Giufrè is our Second Pizzaiolo and has worked with us at our Chiswick and Ealing pizzerias

Ayoub Sammoudi is our Kitchen porter and local to Salina
